News!


Wow.  November seems so long ago.  Here we are knocking on March's door and anticipating many exciting events!  March Madness.  St. Patrick's Day.  My dad's birthday.  My next MRI.

Yes, my MRI has finally been scheduled!  Now comes the nail-biting, heart-racing time of waiting.  The MRI will be on March 8th, however, I will not meet with my doctor to go over it till March 11th.  I'm hoping for another positive report this visit.  Eventually, one of my MRI visits will not be a positive one and the question will always be--"could this be the one?"

BUT, we are not thinking like that, no sir (or ma'am)!  There have been TWO aspects to improved survival rates of folks diagnosed with brain tumors.  ONE: removing chemicals from your body (chemicals in foods [eating healthier and cleaner], environment, etc.) and TWO: having a positive outlook that is free of stress.

I have been doing well with addressing the first aspect.  Healthy eating and cleaning our environment has been interesting.  But stress and attitude have been getting less attention.  I believe the cause of this inequity is because stress feels (to me) out of my control, whereas food is in my control.

So how do you de-stressify your life?  Any cool rituals or helpful hints out there? Let me know your thoughts.

I'm back!

After a week of visiting with my grandma, I'm back to the land on internet and blogging.  Thanks for waiting and (hopefully) not giving up on checking in on my blog.  Unfortunately, this is going to be brief as I have a lot of unpacking to do.  A picture:


Now, I took this picture myself so it's not exactly centered or anything.  But it shows me and my cutie being goofy and playing with the camera.  We had a lot of fun this past week.  While I was visiting my grandmother, my grandfather and Adam were busy painting our house.  It looks beautiful!  The fresh coat of paint will hopefully woo a potential buyer and convince them that this is their dream home.  Hopefully pics of the new paint job to come!  For now, just imagine amazingness in your mind.

Birthdays are a very large piece of cake!

We had a lot of fun taking pictures, playing with the kids, and listening to records on the record player.  But the cake, pardon the expression, took the cake.

Happy birthday Adam!

No matter how old, some things (and people) never change...


It is in fact Adam's birthday today!  He turns 27 and I'd like to publicly thank my in-laws for birthing him and raising him to be the delightful person he is today.  In honor of his birthday, I spent many hours on the internet searching for a HEALTHY cake recipe.  This was an incredibly difficult task.  Apparently cakes aren't supposed to be healthy???  BUT, after much perseverance I finally had some success.  **A tip for any of you wanting to attempt the "healthy" birthday cake.  Search for sugar free baby's first birthday cake.**

Boy oh boy did I find a winner (not just in a cake either!).  It is a carrot cake (which Adam loves) without refined flours or sugars!  Amazing!  The recipe can be found here:

And having already sampled some, I can say that it lives up to it's name: fantabulous!  Now, I'm not going to sit here and claim that I've found the missing link, okay?  The cake has honey, oil, eggs, and pineapple in it.  It is not like sitting and eating a bowl of spinach and brussel sprouts.  But, it is a nice alternative when you want a good sometimes treat.

Sweet Potato and Black Bean Burritos

Our desire to be more healthy has led us down some interesting paths.  We're reading more.  We're spending more time on food and walking (and blogging!!) and 5K-ing.  So here we are.  Eating sweet potatoes and more sweet potatoes.  Apparently, Adam really loves potatoes.  Who doesn't, right?  Well, we are trying to eat less white potatoes--a decision which has made my husband crazy.  Where I am desperately searching for dessert replacements, he is desperately searching for "meat n' potato" replacements.  His favorite?  Sweet potatoes.  Sweet potato burritos, roasted sweet potatoes, sweet potato  stew, sweet potato breakfast "stuff", and so on.

Let me tell you.  This man's birthday is coming up and he asked for (drum roll, please): organic steak and sweet potato fries.

I love him.  And I enjoy sweet potatoes, but I think I'm starting to turn orange.  Fortunately for me, sweet potatoes are a SUPER FOOD.  Just like how Adam is a super husband!  And super foods (like super husbands) pull double duty.  Super foods fill our bellies AND provide us with special nutrients.  Super husbands cook AND clean.  My super hubby prepared most of this particular meal.  Black beans, sweet potatoes, onions, cilantro, seasonings, whole grain tortilla, baked in the oven till crispy.  He also made a mango smoothie to go with it.  YUMMY!  
The best part about experimenting with new foods?  Eating them!  Cheers!

Kudos!

Exciting news in the world of 5K!  I have 2 team members (not including my own children) and both have raised money so far!

Congratulations to Haythem and Laura for taking an important first step in making it to a healthier you!  I am your number one fan!  Goooooo Team!

Also, I want to thank everyone who has donated money to this important cause.  We haven't reached our fundraising goal yet, but I feel very optimistic that we will be surpassing it by race day.  I am grateful for all of my well-wishing supporters as well--keep the well-wishes coming!

A little FYI, the $5 discount for the 5K has been extended to mid-February.  If you think you are going to participate, then now is a great time to register!

Finally, one of my number one fans (my brother) would like more people to respond with comments to my posts!  He is concerned that he is the only one reading my blog.  :o)  Love you Haythem!
